31 Days of Anti-Laziness: Slow Cooker Beef Stew

In an attempt to quell my laziness, I am joining Nester for her 31 Days of Change series and posting daily about my efforts to get some stuff done.

The other night, instead of our usual one skillet dinner or pasta with a jar of sauce, I made Slow Cooker Beef Stew.  For the last month, I've been too lazy to "cook" much of anything, even though I really like to.  Somehow cooking ends up at the bottom of my list of priorities.

Recipe link above.  I omitted the onion and celery as we don't care for either of those, and I took the lazy way out and got baby carrots (no peeling and chopping!) and small red potatoes (washed and left the skin on!).  I also subbed beef broth for the water.  I put all the ingredients in the Crock Pot at about 9:30 and we ate at about 6, and it was perfect.  No need to cook overnight like the recipe says.

It. was. delicious.

Of course we had to have some buttery french bread to go with it.  As Rachael Ray would say... YUM-O!
