31 Days of Anti-Laziness: Tailgating Food: Chili

We spent the day yesterday, as with all Saturdays during football season, tailgating.  It was snowing when we got there, but it cleared up in the afternoon, and actually turned out to be a fairly nice day, albeit cold.  The perfect food for a cold day of tailgating?  Chili.

Slow Cooker Chunky Chili

1 pound lean ground beef
1 medium onion, chopped
2 cans (14.5 oz each) diced tomatoes, undrained
1 can (15 oz) pinto beans, rinsed and drained
1/2 cup prepared salsa
1 tablespoon chili powder
1.5 teaspoons ground cumin
Salt and pepper to taste
1/2 cup shredded cheddar cheese

Cook beef and onion in a skillet until beef is browned and onion is tender.  Drain and discard fat.

Place beef mixture, tomatoes with juice, beans, salsa, chili powder, and cumin in slow cooker.  Stir.  Cover, cook on low 5-6 hours.  Season with salt and pepper.  Serve with cheese.

The only modification I make to the above recipe is to put in half the amount of chili powder... we're not much for spicy food.  We like to eat it with tortilla chips... yum!
